And Dell’s Precision line would also suit your needs too. Honestly, in your position, I would seriously consider workstation class laptops like Lenovo’s W class Thinkpads or even the T470p or T480p in terms of portability.
I love the Apple ecosystem, but in all practicality, PC vendors and Microsoft have come quite a ways and in some instances, have bested Apple in their capabilities. There are good PC options out there as well if neither suit your preferences and needs. That would, of course, kill the portability factor and possibly break the bank. Now, another option is to get a good stand-alone display for the non-retina. For all other purposes the non-retina is better. There’s no comparison between the two displays in regard to color and detail due to the higher quality reproduction and pixel density. If you prioritize photo-editing, I would go with the retina MBP.
